Gingerbread Man Recipe with Real Ginger

For the Gingerbread Men:
- 3 cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon

- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup light brown sugar
- 1 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon freshly grated ginger
- 1 tablespoon molasses
For the Decoration:
- 2 tablespoons butter, melted
- 2 tablespoons light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated ginger
- 1 cup confectioners’ sugar
- 2 tablespoons heavy cream
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
2. In a large bowl, beat together the butter and brown sugar until light and fluffy. Beat in the egg, vanilla extract, grated ginger, and molasses until combined.
3. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Divide the dough in half and roll each half out on a lightly floured surface to ¼-inch thickness. Cut out gingerbread men with a cookie cutter and place the cookies on the prepared baking sheets.
4. Bake the cookies for 12 to 14 minutes, until golden-brown. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
5. To decorate the cookies, mix together the melted butter, brown sugar, cinnamon, and grated ginger in a small bowl. Brush the mixture over the cooled cookies and let them sit for 10 minutes. In a separate bowl, whisk together the confectioners’ sugar and cream until smooth. Drizzle the glaze over the cookies and let the glaze set before serving.
